Lˆ©onine studied Nutritional Therapy at the Institute of Optimum Nutrition under the guidance and tutelage of Patrick Holford. She then taught at the Institute for 10 years becoming a key member of the Education Team and joint Head of Education. She has also trained in Naturopathy at the College of Natural Nutrition and is a member of the Association of Systematic Kinesiology.

She has a particular interest in the therapeutic benefits of raw foods and has studied with international leaders and chefs in the Raw Food Movement.
